Stir Fried Hokkien Flat Noodles

Since I have some left over hokkien flat noodles and big white cabbages, I decided to use it as fried noodles dish as bot ingredients goes well with each other. I got abit of inspiration from those zichar dishes like hor fan, hong kong noodles etc. Normally those zichar stalls will have fish cakes, prawns and sotong in them.

As I always prefer to do it in my own style, so I omited prawns and sotong and using some simple ingredients to make it more homestyled.

Curry Yong Tou Fu

Last Sunday cooked this dish as I miss the taste of curry and yong tou fu together. I have eaten quite a few times at one of the hawker place near my wrkplace area. So i decided to try out by combining some yong tou fu and jap curry together. I am gald it turns out well.

Kim Chi Ramen (Self invented) - Serves 1

Suddenly one day I have an inspiration of mixing kimchi together with ramen. Previously I have done it in a Japanese way. So decided to try out in korea style.. 


Ingredients:-
Half of small pkt of kimchi
2 chicken fillet
Ramen (1 serving)
1 chicken soup stock

Seasoning:-
2 tablespoon of Gohujang

Garnish:-
1 stalk of chopped spring onions


  1. Boil ramen in a pot of boiling water and cook till soften. Soak it in cold water.
  2. Add in chicken into the pot of water and cook till it cooked. Dish out and cool the chicken fillets by putting in cold icy water.
  3. Add chicken stock into the pot of water and disolve.
  4. Shred the chicken fillets into shredded strips and set aside.
  5. Add in gohujang into the pot of boiling water and mix well.
  6. Add in back ramen and chicken together with kim chi.
  7. Once the water has boiled, switch off the stove and garnish with chopped spring onion.

Ramen in miso soup - serves 1

I always love noodles more than rice. It can be cook in either dried, soup, or even semi- dried. I always like how japanese restuarant the way they handle their own kinda ramen. Thinking to myself, if only I know how to cook my own style of ramen in miso soup how great it would be. And yesh! I finally did some research and managed to get some related recipe to try on my own. 

The picture which you see below is my 2nd attempt of the recipe which I gona share with you guys. My 1st try did not reali work out well due to my hot spring egg as the egg white was too watery and I did not put in boiled water to cook it.  Did further research and managed to succeed for the 2nd time.


Ingredients:
1 egg
1 serving cup of canned corns
2 stalk of xiao bai cai - seperate stem and leaves
1 vegetarian cha siew- cut into thin slices
1 serving size of ramen

Soup base:
1 tablespoon of miso paste
1 packet of dashi soup base

Garnishing:
1 stalk of chopped spring onions

Method:

Spring egg
  1. Put eggs in boiling water and cook it for six mins.
  2. After six mins, take out the egg and cool it down with ice water.
Ramen
  1. Cook ramen in boiling till soften for 1 min and place it in a bowl of cold/warm water.
Miso Soup
  1. Follow the same step as stated in my previous blog post: http://evesj85-recipes.blogspot.sg/2012/12/miso-soup-serves-two.html. (Except for the step in adding tofu in the step).
  2. Add in xiao bai cai and cook till the vegetables are cooked. Switch off the fire.
A. Drain off the water away from the ramen, place vegetarian char siew, corns and vegetables nicely.
B. Cut the egg into half and place it nicely.
C. Add in the miso soup and garnish with chopped spring onions.

Vegetarian Beehoon & noodle(Serves two)

I remember last time when I was still very young, my dad often packet vegetarian beehoon for me. I always luv it so much as it taste so good. My favourite was the vegetarian bbq pork and as well as the crispy vegetarian goose. There was once I shop at my house nearby NTUC and come accross the vegetarian bbq. So I bought a packet of it. Below is a recipe of how I create my own style of vegetarian beehoon with some noodles.


Ingredients:-
1/2 cabbage - cut into thin strips
4 pcs of vegetarian bbq pork
1/2carrot- cut into thin strips
1 serving of beehoon - soaked
1 serving of noodles - cooked and drained
1 garlic - chopped

Seasoning:-
2 tablespoon of dark soya sauce
1 teaspoon of sesame oil
1 teaspoon of sugar

Method:-

  1. Heat 1 teaspoon of oil in happy call pan and stir fry garlic until lightly brown.
  2. Add carrot and cook about 3 min or till soften abit.
  3. Add in cabbage, sugar and stir fry for 1 min.
  4. Add in the vegetarian bbq and stir well.
  5. Dish out and add in bee hoon and noodles.
  6. Add in the rest of the seasoning & vegetables, bbq pork and stir well. Serve hot when done.

Soba Noodle

Recently I think my diet is slightly abit of haywire, so heatlhly concept automatically comes to my mind. Have tried eating soba noodle in resturant before. I kinda like the taste of the noodle and the soba sauce. So thought of prepare it on my own.



Ingredients:
2 crabsticks - cut about 2 cm length
Some leafy vegetables
Soba noodles(1 serving portion)

Soba sauce:-
I bot the ready to use soba sauce as per below.

* I pour in half a bowl of soba sauce and 3/4 bowl of cold water and mix well.

Method:

  1. I blanch the crabstick and vegetables 1st in boiling salt water.(p.s for crabstick pls use only boiled plain water and vegetables with boiled salt water.
  2. Set aside and I continue to cook the soba noodle. Once the noodle is cooked, put the noodles to cold water and wait for about 2 mins.
  3. While waiting for the noodle to cool down, I went on to arrange the crabstick and veggie neatly and nicely on a serving plate.
  4. Place the noodle on the serving plate. 
Tip: the correct way of eating this noodle is dip the noodle in the soba sauce and then bring it to your mouth. 

It's so delicious that I don't even have to add in extra seasoning as the noodle and soba sauce already goes so well with each other.

E-Fu Noodle(Serves two)

This is my 1st time trying out this dish. I gald it turn out well (=


Ingredients:-
2 E Fu noodle cakes
4 chinese mushroom -soaked and sliced thinly(p.s do not throw away the water that is use to soak)
some lean meat(sliced thinly)
5 stalk of xiao bai cai(separate the stems from the leave)
Some ready to be use fried garlic

Seasoning:-
2 tablespoon of vegetarian oyster sauce
2 teaspoon of light soya sauce
1 teaspoon of sesame oil
1 teaspoon of sugar
1 dash of pepper

Method:-

  1. Blanch the noodles in boiling water till they lose their cripness(takes about 30 seconds). 
  2. Put the noodle in cold water and set aside.
  3. Heat one teaspoon of oil in happy call pan and add in fried garlic. Stir well till the aroma is out.
  4. Add in mushroom and cook till the mushroom aroma smell is out. 
  5. Add in the lean meat and cook till partially is cooked and add in xiao bai cai stem and e-fu noodle.
  6. Add in the mushroom water and seasoning expect for the pepper. Stir well and cooked till the noodle has adsorbed the sauce.
  7. Add in xiao bai cai leaves and pepper. Cooked till the leaves turns green and serve hot.

Tradditional style of Dumpling Wanton noodles(serves 2)

Aha, previously I had blog about this same recipe but without chestnut inside the dumpling. So here is more traddtional style of doing it..

Ingredients:-
Dumpling:-
12 dumpling skins
Some minced meat(according to your prefered serving)
2 chestnut - diced into smaller cubes
6 medium size prawn - shelled; removed vein; cut into halves
Seasoning:
2 tablespoon of light soya sauce
1 teaspoon of sesame oil
Dash of pepper to taste

Noodle soup:-
1 cha siew(cut into slices)
12 stalk of cai xin
2 serving of uncooked wanton noodles
1 chicken soup stock
3 stalk of spring onion - garnishing(chopped)

Method:-
A: Making of dumplings

  1. Mix minced meat with the seasoning listed above.(for best result, you can chose to marinate the meat overnite).
  2. Place the prawn into the centre of the dumpling.
  3. Add in about 2-3 chestnut cudes.
  4. Add 1 tablespoon of minced meat and seal the end of the dumpling skin with some water.

Simple easy to cook curry mee~(serves two)


Ingredients:
6 small potato (cut into half)
2 sachet of noodle(here i use mee po)
1 carrot(cut into quatered)
1 chicken breast meat(cooked & shredded)
Half packet of curry power
1 small packet of coconut milk
Fried shallots

Method:
  1. Boil the noodles in hot water. Drain off the water and place it in bowls.
  2. Heat oil in wok. Stir fry the chicken till slightly golden brown.
  3. Add potato and carrot and fry till golden brown.
  4. Add in the curry power and stir fry awhile.
  5. Add in about 100ml water and stirwell.
  6. Simmer till low fire and cook till carrot and potatoes are soften
  7. Add in coconut milk and and stir well. cook for about 2 mins. 
  8. Serve hot with fried shallots.

My own verison of own cooked Char Kway Tiao~(serves two)



Ingredients:
2 eggs, beaten
1 1/2 fish cake - cut into slices
1 cup of bean sprouts
100g of hokkien mee
100g of kway tiao
2 chicken sausages - cut into slices

Seasonings:
2 Tablespoon of vegetarian oyster sauce
2 Tablespoon of dark soy sauce
1 Teaspoon of sesame oil
A dash of pepper
1/2 Tablespoon of chilli sauce(optional)

Method:

  1. Heat up 2 tablespoon of oil and fry the egg.
  2. Use spatula to cut the eggs into smaller pieces and fry till slightly golden brown. Dish out.
  3. Heat up 1 tablespoon of oil
  4. Stir fry the chicken sausages till slightly golden brown.
  5. Add in fish cake and fry till slightly brown.
  6. Add in the kway tiao, hokkien mee, egg and bean sprout.
  7. Add in seasoning except sesame oil & pepper and mix well. For those like chilli flavour can add the chilli sauce.
  8. Switch off the stove fire and add in the sesame oil and pepper.
  9. Serve hot.

Simple Wanton Mee Soup with Dumplings(水饺)- Serves 1


Ingredients:
4 stalks of cai xin(seperate the stem and leaves)
Chao Shao(cut into 1 cm thick slices)
Wanton Mee(1 small cup)
1 Ikan Bilis stock cudes

Dumplings:
3 Dumpling skin
6 teaspoons of Mince pork(mix with 3/4 tablespoon of soya sauce, 1 teaspoon of sesame oil & dash of pepper)
* best to leave it overnite as it will taste even more better)
6 medium size prawns

Seasoning:
Pepper & 1 to 2 teaspoon sesame oil

Method:

Wrapping of dumplings:

  1. Put 2 prawns in the centre of the dumpling skin.
  2. Add 2 teaspoon of mince meat.
  3. Fold the dumpling into half and seal the corner with water.
Cooking of wanton mee
  1. Boil a pot of water till it boils. Add in the ikan bilis stock cudes.
  2. Add wanton mee and cai xin stems for about 5 mins.
  3. Add in Dumplings and cook till it floats on the surface of the soup.
  4. Add in cai xin leaves& chao shao and cook about 2 mins.
  5. Add in sesame oil and pepper to taste. Serve hot.
Note: you may want garnish with some chopped spring onions.

Noodle cooking in free style


Ingredients:
1 cup of bean sprout
1 packet of instant noodle
1 slice of ham (cut into thin strips)
1 stalk of spring onion (Cut into 1 cm long)
Seasoning:
1 tablespoon of dark black sweet sauce
1 teaspoon sambal paste

Method:
  1. Blend beansprout & ham in boiling water.
  2. Dish out and cook the noodle.
  3. Drain out the water and left some water to use it to mix well with seasoning.
  4. Garnish with spring onion and serve hot.

Stir Fried You Mian (serves 1 to 2 person)



















Ingredients:
You Mian
5 stalk Cai Xian(separate leaves and stem)
Some Minced Meat
1 Garlic and 1 Shallot(chopped thinly)
1 beaten egg


Seasoning:
Sesame oil, Oyster Sauce(vegetarian), black sweet sauce, black soy sauce, tomato sauce, chilli sauce, light soy sauce

Method:
  1. Marinate minced meat with 1 tablespoon of light soy sauce and 1 teaspoon of sesame oil.
  2. Cook you mian in boiling water for 2 - 3 mins.
  3. Put the cooked you mian in cold water.
  4. Fry garlic and shallot in hot oil till slightly brown.
  5. Add in minced meat n cai xin and cook well.
  6. Add you mian and 2 tablespoon of - oyster sauce, black sweet sauce, black soy sauce, tomato sauce; 1 tablespoon of chilli sauce.
  7. Add in beaten egg to give the noodle nice and smooth texture and 1 tablespoon sesame oil.

As I have some leftover ingredients in my fridge , so i hereby make full use of every ingredients by cooking a simple noodle soup.. ^^

Noodle soup(abit similar to hong kong style)














Ingredients:
1 packet of instant noodle(throw away the seasoning packet)
2 hot dogs (cut about 4 cm)
Half cabbage(cut into thin strips)
Half Carrot(shredded thinly)
2 pieces of bacon(cut into thin strips)
Some dong cai

Seasoning:
2 tablespoon of below following:-
hua diao jiu
fish sauce
soy sauce
1 tablespoon of sesame oil

Method:
  1. Cook all veggies, hotdog in hot water.
  2. Add in noodles, bacon and seasoning.
  3. Serve hot with dash of pepper.

I come across a veri special recipe wic introduces a stir fried udon recipe in this blog:Anncoo's Hobby. So hence decided to try it on last sun.. So here is my own version of fried udon.. (=

Fried Udon(serves 2)
Ingredients:
Xiao Bai Cai (about 5 stalk)
6 hot dogs - cut about 4 cm each
2 Garlics and Shallot- cut thinly
2 eggs - beaten
10 small chinese mushrooms
2 packets of udon - boiled

Seasoning:
2 tablespoon of each:
Black Sweet Sauce
Oyster Sauce
Dark Soya Sauce






Method:
  1. Heat Oil and fry garlic and shallot till slightly brown.
  2. Add in mushroom and simmer about 5 mins
  3. Add in hotdogs and cook for awhile and slowly add in the veggie(tips: 1st add in the stem of veggie den the leave as the stem tends to be harder)
  4. Add in udon and egg together with the seasoning. Mix well and simmer about 5-10mins.

Alrite, let me start the 1st post of this blog w a simple recipe 1st..

Simple shredded chicken noodle

Ingredients needed:
3 Chinese mushroom - soak(1hr) and cut into slices
3 stalk of any leafy veggies(like cai xin or xiao bai cai)
1 carrot - cut into thin slices
1 Chicken fillet
1 Packet of noodle(cooked)*in this case i use mee bo

Seasoning:
2 tablespoon of each following:
Vegetarian Oyster Sauce
Black Sweet Sauce
Chilli Sauce and Ketcup
1 tablespoon of Sesame Oil






Method:
  1. Scald all the veggies, carrot and Chicken and  set aside.
  2. Soak the chicken fillet in warm/cold water. Once cooled, shred the chicken fillet
  3. Next, cook the mushroom till soften and set aside as well.
  4. Next cook the noodles.
  5. Once done, drain away the water and left some of it so that it will be easier to mix with the seasoning.
  6. Add all the seasoning and mix well.
  7. Add in the rest of the ingredient and serve hot.
