Gochujang Chicken Stew

I had book marked this recipe quite some time ago but just that did not have much time to try it out. This dish require korean chilli powder which is known as gochugaru but I did not have any until when I decide to pay a visit again at the sol korean mart at novena again to stock up some korean food stuff.

I feel that this dish is similar to those chicken stew and baised chicken mingjolt (in my this blog i named this dish as stewed chicken wing) which I have prepare before. The only difference is that this dish uses not only gochugaru, it also uses gochujang and is spicy while the other is more consist of oyster sauce, dark soya sauce etc..

I adapted this recipe from my favourite recipe blogger, Ellen Guan.You may prefer to hers for the original recipe as I have modified this recipe to make it less spicy as my luv he can't really take too spicy food.

Chicken Salad with bread

Suddenly have a strong determine to get myself in some serious and strict diet. I have some bread which I bought and some left over carrot. So I thought of making a healthy chicken salad with some lightly toasted bread for a dinner as dinner is best not to let yourself eat too much especially starchy food. Hope this recipe also benifit ladies out there who are trying to have a healthy diet lifestyle too.


Ingredients:-
1 Potatoes - cut into cudes
1/2 carrot - cut into cudes
3 chicken fillets - cut into cudes
1 multigrain bread

Seasoning:-
Dash of salt

Method:-

  1. Cook chicken in a pot of boiling water till cooked. Add in salt to taste.Dish out.
  2. Cook potatoes, carrot till soften. Add in salt as well. Dish out and place potatoes, carrots and chicken in a serving bowl.
  3. In the meantime, toast the bread in a oven toaster for about 3 mins. Use a tong to remove the bread and cut the bread into small cudes. Mix well with the chicken, carrot and potatoes.
  4. You may want to serve with some local letture to make this salad more nutritious.

Stir Fry Celery with chicken strips & carrot(serves 2)

For those who are my regular follower, you would have notice previously I have posted the same dish without any meat. Now this recipe is with chicken meat. The difference between this and the previous recipe is that the chicken can add enhance to this dish. Meat lover will difinately love this dish lots!


Ingredients:
4 stalk of celery - peeled & sliced
1 carrot - peeled & sliced
2 chicken breastmeat(for 2 serving portion) - cut into strips
1 garlic - peeled and chopped

Seasoning:-
1 tablespoon of cornflour
1 tablespoon of oyster sauce
1 tablespoon of rice wine
Dash of pepper

Method:

  1. Marindate the chicken strips with the seasoning. Set aside for 10 mins.
  2. Heat 1/2 tablespoon of oil and stir fry the chicken for 1-2 mins and dish out.
  3. Add in again 1/2 tablespoon of oil and fry the garlic till fragant.
  4. Add in celery and carrot and cook till the soften.
  5. Add in chicken strips and cook about 3 mins.
  6. Add some water to make sauce and simmer for about 2 mins before serving.

Chicken Breast with Mushroom(serves about 3 pax)

Suddenly have a urge to cook this dish and also my mum had just have her operation so I think this dish is quite suitable for her current condition. Did some research on this dish and so here I am presenting my own style of this recipe(:

Ingredients:
1 Chicken breast - cut into cudes
10 chinese mushroom - soaked & cut into slices
4 stalk of spring onions - Chopped
1 stalk of coriander leavesn - Chopped
1 tablespoon of hua tiao jiu
4 pieces of peeled ginger
1 tablespoon of cornflour(to marinate the chicken)

Seasoning sauce:
2 tablespoon of vegetarian Oyster sauce
2 Tablespoon of dark soya sauce
Dash of black pepper
1/4 sesame oil
1 teaspoon of sugar
1 teaspoon of cornflour(mix together with 2 tablespoon of water)
Salt to taste.

Method:

  1. Marinate the chicken with hua tiao jiu and cornflour and leave it overnight.
  2. Mix the seasoning sauce together except for cornflour and salt).
  3. Heat 1 tablespoon of oil and fry ginger till fragant. 
  4. Add in chicken and stir fry till is half cooked.
  5. Add in mushroom, sauce and mix well till the chicken is nicely coated with the sauce. 
  6. Add in the cornflour mixture to thicken the sauce and salt. Cook for 1 minute or till the chicken is fully cooked.
  7. Serve hot with chopped spring onions & coriander leaves.

Simple and easy to do Terryaki chicken with egg~

Ingredients:
5 chicken fillets (chopped into cudes)
6 tablespoon of terriyaki sauce
(above ingredients I mix them together and marinade overnight)
1 yellow onion (cut into slices)
3 eggs (beaten)
Some seaweed (cut into thin strip as shown above)

Seasoning(for the egg mixture)
3 tablespoon of dashi soup
1 1/2 tablespoon of sugar.

Method:

  1. Add in seasoning ingredients into the egg mixture and stir well.
  2. Heat about 2 tablespoon of oil. Add in onion and stir fry till slight golden brown.
  3. Add in chicken cubes and stir fry till brown color.
  4. Pour in egg mixture and once the bottom of the egg mixture is cook, stir well with the chicken cubes. Cook till the egg mixture about 50% done.(means not to let the egg fully cooked so as to maintain the watery texture in it.)
  5. You serve this dish on top of cooked rice and garnish with seaweeds.

Marinate of chicken(for steamboat purpose, serves 2-3 people)


Ingredients:
4 pcs of chicken fillet(cut into thin slices)

Seasoning:
1 table spoon of Soy Sauce
1 teaspoon of sesame oil
A dash of pepper

Method:
Mix all the seasoning well with chicken and let it alone for 4 hrs before serving.

Below is a dish which I like it the most, and so do my luv(= I originally adpated the recipe from the recipe book which is compiled by my secondary school home economics teacher but I gt made some changes..

Chicken Stew~(serves 2)

Ingredients needed:
100g chicken breastmeat(cut into cudes)
2 tablespoon of peas
2 small potato(cut into quartered)
1/2 carrot - cut into 1 cm thick
1/2 onion - cut into slices
200ml of water

For coating chicken:
2 tablespoon of cornflour
1/4 teaspoon of salt
Pepper to taste


Seasoning:
2 tablespoon dark soya sauce

Method:

  1. Coat the chicken with all the ingredient needed to coat chicken.
  2. Heat oil and add in onion. Stir fry till slightly brown.
  3. Add in chicken cudes and stir fry till slightly brown as well.
  4. Add in carrot, potato, water and dark soya sauce. Simmer till carrot and potato are soften.
  5. Add in peas and simmer for about 3 minutes before serving.

Stewed Chicken wings




Ingredients needed:
9 Pcs of Chicken Wing (Mingjolt protion)
3 Chinese Mushroom
2 Small Ginger - Sliced
2 Stalk of Spring Onion(Chopped & for garnishing)
1 Stalk of Corindar Leaves (Chopped & for garnishing)

Seasoning:
1 Tablespoon of each:
Osyter Sauce
Hua Tiao Jiu
Dark Soya Sauce
1 Teaspoon of Sesame Oil

Method:
  1. Marinate the chicken wing with the seasoning sauce and leave it for about 10 mins.
  2. Fry the sliced ginger and till fragrant.
  3. Lower the heat and add in the chicken wing and chinese mushroom.
  4. Add in about 1 cup of water and simmer the chicken wing for about 20 mins.(* add in more water if the sauce dry up.
  5. Garnish it with spring onions and corindar leaves.
P.S: you may add in some chopped chillies to make this dish spicy. (=
