Lotus Root Soup



This is a very easy soup recipe and all the ingredients you can easily get from supermarket.. One of the soup I will cook often when i run out of ideas for cooking soup..

This soup also my husband favourite soup..

Below recipe serves two

Ingredients:- 
🔹Lotus root (cut into 1cm thickness)
🔹2 to 3 pork rib for soup
🔹1/2 cup of raw peanuts
🔹Abt 20pcs of small scallop
🔹10 red dates

Prawn noodles soup broth

I used to buy those prima taste prepack set which has the soup base, fried onions, chili and garlic powder. Each set cost quite costly. As times goes by, I managed to explore and come out with my own of broth as per below.

Serves 2 to 3 person

Ingredients
About 20 prawn shells (I save the shells from previous prawns used for cooking)
Yellow Beans - half a bowl, washed
3 pig bones(optional)
10 cloves of garlic
Ikan Billis - abt a cup, washed
2 tbsp of oil

Seasoning:
1 to 2 rock sugar
Dash of salt and pepper
2 tbsp of dark soya sauce

Miso soup with Salmon

I chance upon a website that has a recipe that can cook salmon in miso soup and since there was one time i have half piece of salmon steak so why not?

I did not follow exactly on the recipe but I just lump whatever I had that can match with the soup.

Salted Vegetables Soup

This is one of my favourite soup. During weekdays lunch, sumtimes I will prefer nothing esle but a hot bowl of soup with a bowl of rice. 

So I have tried to study how to cook a salted veggies based on my observations on home n outside. N finally I figure it out. hehe

Old Cucumber Soup

This one of the easiest soup to cook. I like to eat the flesh of the old cucumber. It is very easy to prepare as well. You just need some dates, old cucumber and pork ribs and here you go to match with other side dishes with rice.

Kim Chi Soup(serves two)

Is pretty cold and raining season for this month. So is a best excuse for me to have something hot and spicy for lunch or dinner. I can say I am a person who really fancy alot on Japanese and as well as Korean cuisine.   They have always include their signature vegetables/meat etc into their dishes, such as seaweed for Japanese and kim chi for Korean. So the below recipe which I will sharing is a full of korean culture soup.


Ingredients:-
1 medium onion - cut into slices
1 silken tofu - cut into thick section of cubes
Half of China wong kok - cut into section
4 chicken fillets - cut into slices
3 cloves of garlic - minced
3 stalk of spring onions - 2 stalk cut into 3cm long and 1 stalk cut into 1cm long for garnish
150g Kimchi like the above

Seasoning:
2 table spoon of Gochujang
Salt & pepper

Method:
  1. Add in 1 teaspoon of sesame oil in happy call pan and satute minced garlic.
  2. Add in chicken and stir fry to almost white.
  3. Add in onions, spring onions(3 cm long), kim chi and gochujang and stir well. 
  4. Add in about 600ml of water and cover the pan till the water has boil.
  5. Transfer the soup to a pot and continue add in wong kok. Add in more water if neccesary and simmer for 10 mins.
  6. Add in tofu & salt and simmer about 5 mins.
  7. To serve, add in spring onions for garnishing and pepper to taste. Best serve with rice and you can even use the soup as raman soup base.

Miso Soup (serves two)

I have been craving to cook my own miso soup but doesn't know how to go about it until I come across Dr Lesie Tay's Ieatishootipost blog on one of his ieatvideo. There is one particular video which teaches how to make simple miso soup on your own. So I am gald that I can make my own and share this recipe with you guys =D 

Ingredients:
1 silken Tofu - cut into small cubes
1 tablespoon of miso
* I dun really want my soup to taste super salty so I bought the above instead
1 Packet of dashi soup powder

Method:-
  1. Boil a pot of water and add in dashi soup powder. Stir well.


2.  Lower the fire to small fire. Disolve one tablespoon of miso with wire ladles(like above) into the   soup(this step is to enable miso being dissolve into the soup evenly.)
3. Add in tofu and simmer for1 to 2 mins.

If you prefer with seaweed, you can add in some wakame seaweed before adding in tofu. You can get such seaweed at Singapore Meidi-Ya supermarket which is located at Liang Court.

Red Vegetable Soup

I super luv this simple soup. Not only it is a simple to prepare meal, the red vegetables also can help esp woman to replehish blood esp after once a month the routine of losing blood. Very norishing soup I can say. The only bad thing is this type of vegetables doesn't come that often. Anyway, below recipe is adapted by my mum own style of cooking.


Ingredients:-
1 big stalk of red vegetables - stem removed
1 packet of fish balls
2 eggs beaten
1 Ikan Billi soup stock cube

Method:-

  1. Boil a pot of water and add in the ikan billi soup stock cube. Dissolve the cube well.
  2. Add in fish ball. Cook till the fish ball rises and touches to the surface of the water.
  3. Add in red vegetables and beaten egg(Tip: pour in the beaten egg bit by bit and in circular direction).
  4. Switch off the stove once the vegetables is cooked and serve hot.
(Note: I did not add in any seasoning as I feel the taste is just nice for me.)

Simple Mix vegetables and Tofu Chowder(serves one)~

This was actually a Hong Kong style of soup. I did not reali follow the whole recipe which I got it from my Hong Kong style recipes book. Instead I prefer do it my own style. Hehe~ I have been trying this soup twice.Will definately cook it again.^^

Ingredients:
1/2 Green Tea Tofu(you can get it at ntuc)
3/4 cups of mix vegetables
6 soaked chinese mushrooms- cut into slices
1 teaspoon of rice wine
2 tablespoon of cornflour (dissolved in 2 tablespoon of water)
1 chicken stock

Seasoning:
1 teaspoon of salt
1 teaspoon of sesame oil
Dash of pepper to taste

Method:

  1. Heat 1 tablespoon of oil in a small saucepan and add in the rice wine. Let it sizzle and switch off the stove.
  2. Add in the chicken stock and cooked water(fill it up till half of the saucepan).
  3. Switch on the stove again and dissolve the chicken stock.
  4. Add in mushroom and cooked about 5 mins till tender.
  5. Add in mixed vegetables and salt. Simmer for about 5 mins.
  6. Add in tofu, cornflour mixture and stir until the soup thickens to the consistency of chowder.
  7. Add pepper and sesame oil. Serve hot.

Cabbage Green Soup~

Gotten this recipe from one of the mini recipes books i bot from popular.. Is a kind of healthly soup so I try it out.

Ingredients:
10 stalks of Choy sum(cai xin) -  cut into finger length
50 g of minced pork
2 tablespoon of light soya sauce
Dash of white pepper
4 cups of water
1 tablespoon of fried shallots

Method:

  1. Mix minced pork of light soya sauce and pepper.
  2. Boil water in a pot. 
  3. Add in minced pork small portion by small portion. Once the meat is cook, you might want to add in some salt for taste.
  4. Add choy sum and cook till it changes color and switch off the stove.
  5. Serve hot with fried shallot.

Simple fish soup~(serves one - two pax)


Ingredients:
5 to 6 lettuce leaves(cut into two)
Some tofu puff(cut into half)
1 tofu(cut into cudes)
3-6 Crabsticks(cut into half)
Toman fish(cut into about 0.5cm slices)
1 carrot (cut into quatered)
1 vegetable soup stock

Method:
  1. Boil a pot of water.
  2. Add in the soup stock and stir well ton dissolve
  3. Add carrot. Boil till carrot soften and in the fish. Both for about 5 mins.
  4. Add  in the rest of the ingredients expect for the lettuce and boil for another 3 mins.
  5. Add in the lettuce and serve hot.

Previously I was searching for some ideas of how to cook pumpkin.. So here I am to present my simple pumpkin soup recipe here..

Simple Pumpkin soup~


Ingredients:
1 sweet corn (cut into 5 chunks)
1/2 carrot(cut into quartered)
1/4 of medium pumpkin
3 pork rib(scalded)

Seasoning:
2 teaspoon of salf

Method:
  1. Put in the pork rib and pumpkin. Cook for about 10 minutes.
  2. Add in the rest of the ingredients and salt.
  3. Cook for about 50 minutes and serve hot

Potato soup~(serves 2 person)


Ingredients:
3 Potatoes(peeled and cut into quarters)
3 Pork ribs
1 carrot(peeled and cut into quarters)
2 onions(skinned and cut into quarters)

Method:
  1. Use boiled water to scald the pork rib.
  2. Pour away the water and boil some water in the pot.
  3. Once water is boiled, add in the pork rib for an hour than add in onion and potato.
  4. Cooked till the potato is half soften and add in carrot.
  5. Cook till the carrot is soften and add in a pinch of salt to taste.

Winter Melon Soup


Ingredients:
Pork Ribs(about 4 to 5 pcs)
1 big slice of Winter Melon - skined, seeds removed; cut into chucks (I bought it from NTUC)
1 Carrot - cut into quarters
10 red dates
2 Teaspoon of salt

Method:
  1. Boil a pot of water and add in pork rib.
  2. Take out the pork rib and drain off the water.
  3. Prepare a pot of water again and add in pork rib.
  4. Simmer about 1 hour in low and add in the rest of the ingredients.
  5. Simmer for another hour and serve hot.

Simple dumpling soup

Ingredients:
2 tablespoon of ikan billis
1 cup of minced meat - marinated with two tablespoon of light soy sauce, 1 tablespoon sesame oil n dash of pepper
Some dumpling skins
2 garlic - crushed/flattened
2 tablespoon of dong cai
Seasoning:
2 tablespoon of Rock Sugar

Method:
  1. Put the minced meat(potion about 1 tablespoon) on dumpling skin. 
  2. Fold the dumpling skin into semi-circle shape. Seal the opening with water.
  3. Boil a pot of water and add in garlic and ikan bills.
  4. Boil till fragrance is out.
  5. Add in rock sugar and stir well.
  6. Add in dumplings and cook for 5-10mins.
  7. Lastly add in dong cai and cook for 5 mins.
  8. You can garnish with chopped spring onion.
* Ps: you can add some pepper to balance the sweetness of the soup.. ^^

Simple Mao Melon(毛瓜) Soup



Ingredient:
1 cude of ikan billi soup stock or sum fried ikan billi
1 Mao Gua(cut into quarters)
1 Packet of fishball


Method: 
  1. Boil a pot of water. 
  2. Add in ikan billi soup stock or sum fried ikan billi.
  3. Add in Mao Melon and let it slowly be cooked. 
  4. Add in fishball and let the soup be cook for a while longer till fishballs are being cooked.
