Tom Yam Seafood Pasta

This recipe inspiration comes from a you tube about simple minced meat bolgnese. I have bought some tomyam stocks(3 small boxes at a speacial price and that time ntuc don't sell single box) so hence i decied to combine this tom yam stock into this recipe and taste so yummy!!

Prawn noodles soup broth

I used to buy those prima taste prepack set which has the soup base, fried onions, chili and garlic powder. Each set cost quite costly. As times goes by, I managed to explore and come out with my own of broth as per below.

Serves 2 to 3 person

Ingredients
About 20 prawn shells (I save the shells from previous prawns used for cooking)
Yellow Beans - half a bowl, washed
3 pig bones(optional)
10 cloves of garlic
Ikan Billis - abt a cup, washed
2 tbsp of oil

Seasoning:
1 to 2 rock sugar
Dash of salt and pepper
2 tbsp of dark soya sauce

Black Soy fish steak(serves 2-3)

My 1st time prepare fried and I am so gald that I have done this dish so well. I will definately cook it again. By the way, I follow the recipe book about asian seafood recipe and change the portion of the seasoning. I am gald the taste was so awesome delicious too~


Ingredients:-
2 Threadfin steak
1 medium onion - sliced
2 red finger chillies - sliced
1/2 cup of water

Seasoning:-
1 teaspoon of salt
1/2 tablespoon dark soya sauce
Dash of pepper to taste
1/2 teaspoon of sugar

Method:-

  1. Rub the salt into the fish and set aside for 15 minutes.
  2. Heat about 3 tablespoon of oil in the happy call pan.
  3. Fry the fish till golden brown on both side and set aside.
  4. Use the remaining oil to fry onion and chillies. Fry the onion till soft.
  5. Add in dark soya sauce to lightly caramelise. 
  6. Add in water, sugar and pepper. Mix well with the caramelised soya sauce and cook till it boiled.
  7. Add in the fish and simmer for 3 minutes or till the fish is cooked.
  8. You may wish to serve hot with plain rice or porridge.

Cereal prawns(Serves two)


Ingredients:
10 large tiger prawns - remove shell except for the head & tail; deveined & washed
2 eggs -  beaten
Half packet of cereal prawn instant mix
10 curry leaves
2 tablespoon of magarine

Method:

  1. Heat  2 tablespoons of oil and stir fry prawns till it cooked and set aside.
  2. Melt margine and add eggs. Use spatula to cut egg mixture into smaller pieces. Fry the eggs till golden brown and dish out.
  3. Heat 1 teaspoon of oil and fry the curry leaves.
  4. Add in the cereal prawn instant mix and mix well.
  5. Add in the prawn and eggs and stir fry evenly. Serve hot.
P.s: if you want to make this dish as a spicy version, can add in some chopped chilli padi together curry leaves.

Marinate of Fish fillet(for steamboat purpose; serves 2 - 3 people)


Ingredients:
1 big piece of toman fillet(cut about 1 cm thick)

Seasoning:
1 tablespoon of soya sauce 
1 teaspoon of fish sauce & hua tiao jiu

Method:
Mix all the seasoning together with the fish and let it for four hrs.

Steamed fish(serves 4)


Ingredients:
2 medium size Pomfret fish(slit cut on each side of the fish)
1 small ginger - cut into thin strips
1 dried mushroom (soaked and cut into thin strips)
1 stalk of Celery - cut into 1 cm long

Seasoning:
1 table spoon of the each following:
light soya sauce, sesame oil and chilli black bean sauce.

Method:
  1. Rub the fishes with salt.
  2. Put the fish in a deep plate and arrange the cut ingredients except celery on top of them.
  3. Mix all the seasoning and add in some water.
  4. Pour the sauce over the fish.
  5. Heat water in a steamer and steam for 20 mins.
  6. Garnish with celery and serve hot.
