Tomato eggs with tomato sauce

In the past I only know of sunny side up, stir fried eggs with onions. I did not know that tomatoes also can goes well with eggs too!

Anyway I entire adapt the recipe from I eat I shoot I post facebook. I tried it twice and is pretty easy to cook and matches well with rice..


Serves two


Ingredients:
3 eggs - beaten
1 1/2 tomatoes - cut into wedges
1 1/2 tsp of corn flour - dissolved 11/2 tbsp of water
Pinch of baking powder
1 tsp of chopped garlic
2 stalk of chopped onions

Seasoning:
Pinch of salt
1 1/2 tbsp of tomato sauce
1 1/2 tsp of chilli sauce

Method:

  1. Add in the salt, baking powder and corn flour mixture into the beaten egg mixture and mix well.
  2. Heat oil in the pan and fried the egg mixture till 80% done. Set aside
  3. Heat oil and stir fry tomatoes together with garlic, tomato and chilli sauce. Fry till tomatoes are soften.
  4. Add in the egg mixture back to the pan and fry for a min.
  5. Dish out and garnish with chopped onions.
