This is one of my favourite mixed rice side dish which I would normally order if i am order mixed rice outside. The potatoes goes so well with the minced meat. Great side dish to accompany with steamed rice!
This recipe is adapted from one of my favourite website: noobcook. I change abit of the ingredient to suit my taste bud =P
Serves two
Ingredients:
3 potatoes - cut into thin slices about 1/2 cm
some minced meat
some mixed vegetables
1 medium size onions - cut into slices
4 cloves of garlic - chopped
1 tbsp of olive oil
Marinade
1/2 tsp of light soya sauce
1/2 tsp of sesame oil
1 tsp of rice wine
1/2 tbsp of corn flour
dahes of white pepper
1 tbsp of mirin
Sauce
1 cup of water
1 tbsp of light soya sauce
1/2 tbsp of dark soya sauce
1 tsp of sesame oil
Method:
- Marinade minced meat with all the marinade ingredients. (I normally marinade overnight as it would be more tasty and the meat have more time to absorb.)
- Heat oil in pan. Add onions and stir fry until they are soften, Add in garlic and fry till frangant.
- Push both onions and garlic to one side. Add in marinaded meat. Stir fry till pork is semi cooked and use spatula to break the meat into smaller pieces .
- Add in potato slices and stir fry for two mins. Add in all the sauce ingredients and stir well to coat evenly everyting. Cover with lid and simmer for 10 mins. Add in mixed veggies halfway. Add in water if the simmering sauce runs dry.
