Come across another easy to cook recipes. So here I am sharing this recipes with of my own version. The method is still the same like what I did for my other fried rice recipes and ingredients wise I keep it simple as it is.

Serves 2 - 3

Ingredients:-
3 servings of cooked rice (best is the rice is keep in fridge overnight)
2 eggs - beaten
1 1/2 cup of mixed vegetables
180g of new moon otah
2 cloves of garlic

Seasoning:-
2 tablespoon of light soya sauce
Dash of salt
Dash of pepper (optional, if you prefer your fried rice to be more spicy)

Garnishing:-
2 stalks of chopped spring onions

Method:-

  1. Pour in half of the egg mixture in wok/pan and cut the egg into bite size pieces when is cooked. Stir fried till is golden brown and dish out
  2. Place the otah in wok/pan and cook till both side is slightly brown. Use spatula to cut the otah in cude size pieces and set aside.
  3. Using the oil left behind by the otah, add in garlic and stir fry till slightly brown. Add in mix vegetables and stir fried for a min.
  4. Add in rice, otah and egg pieces to the wok together with seasoning and remaining uncooked egg mixture. Mix well and serve hot on a plate.
  5. Garnish with chopped spring onions.
