8 Long Beans - cut about 5cm length
Half of a small cabbage - cut into 1cm
1 Carrot - cut into quarter
3 potatoes - cut into half
1 packet of curry paste
1 packet of fresh coconut milk - cut about 3 - 4 cm long
2 stalk of lemon grass
2 stalk of curry leaves
2 Garlics and Shallots- sliced thinly
1 tablespoon of oil
Method:
- Stir fry both garlic and shallot w/o any oil.
- Next, add in oil and fry garlic and shallot till slightly golden brown
- Add in all the veggie and fry well.
- Next, fry well with curry paste and slowly add in water together with curry leaves and lemon grass.
- Once the potato is almost cooked, add in coconut milk and simmer for a while
- Serve hot with rice
