Recently feel like trying out a new recipe which I never tried before and sounds something new to me. Just stir fry a few of the ingredients and continue cook it in a rice cooker. Sounds easy isn't it? Simple one dish meal and very fufilling to the stomach. I like the fragrance of the cabbage and rice is nicely blended with the natural taste of cabbage together with shrimp, scallop.
Ingredients
(Serves 3 - 4)
1/4 & half a quarter of cabbage - thinly sliced
2 pork belly - thinly sliced and top layer of fats removed
3 tbsp of shrimps - soaked and cut into fine bits like above
10 small scallops - soaked and shredded into thin shred (please reserve the water after soaking scallops)
1 garlic - chopped
Dash of sea salt
Some water for cooking rice
2 cups of rice - washed
Method:-
- Heat pan/ wok in medium heat and stir fry pork till cooked. Dish out.
- Using the oil left behind in the pan, add in garlic, shrimp, scallops shreds. Stir fry till shrimp is brown.
- Return the pork belly to the pan/wok, add salt and mix well evenly.
- Add and cabbage and mix well(no need to cook the cabbage till fully cooked). Switch off the stove.
- Transfer all the stir fried ingredients in the rice cooker together with the rice. Mix well with the rice.
- Add in scallop water and water till the water covers the vegetables.
- Let the rice cooker continue cooking and once is done, you can enjoy a simple and healty rice meal.
