Since I have some left over hokkien flat noodles and big white cabbages, I decided to use it as fried noodles dish as bot ingredients goes well with each other. I got abit of inspiration from those zichar dishes like hor fan, hong kong noodles etc. Normally those zichar stalls will have fish cakes, prawns and sotong in them.
As I always prefer to do it in my own style, so I omited prawns and sotong and using some simple ingredients to make it more homestyled.
Serves 2
Ingredients:-
Half packet of noodles - scalded and soak in tap water
Big white cabbage leaves about six, cut into 1 cm wide
2 fish cakes - sliced thinly
Some lean meat - sliced and marinade over nite with 1 tbsp of soya sauce and 1 tbsp of mirin
3 red chilly padi - chopped
2 garlic - chopped
1 or 2 tsp of ready to use fried shallots
Seasoning:-
1 tbsp soya sauce
1/2 tbsp dark soya sauce
1/2 tbsp oyster sauce
1 tsp sugar
1/2 tsp salt
dash of pepper
200ml of water
Method:-
- Mix all ingredients for seasoning as gravy and set aside.
- Heat oil and stir fry garlic till frangant and lightly golden brown.
- Add in lean meat and stir fry for 3 mins.
- Add in cabbage and fish cake for 2 mins.
- Add in gravy and cook for 2 mins or till gravy thicken before adding in noodles.
- Cook together with the noodles and add in chopped chillies. Simmer in medium for about 3 or 5 mins.
- Serve in individual plates and garnish with fried shallots.
