Japanese Potato Salad

Found this recipe on another blog. Hence decided to give it a try. I did not know corn can be part of a salad. Is so refreshing and crunchy. So does the japanese cucumber.  I have change part of the recipe to make it less fattening yet still very delicious. I even eat it for breakfast during my working days.


Serves: 2


1 Japanese cucumber - cut into semi circle slices just like above
1/4 teaspoon of salt
3 Potatoes - cut into quarters
1/2 medium carrots - cut into semi circle slices
3 tablespoon of cooked corn nibbets

Seasoning:-
4 tablespoon of Japanese Mayonise
Some salt and pepper to taste

Method:-

  1. Rub cucumber with 1/4 teaspoon of salt. This step is to allow cucumber to sweat and more crunchy. Set aside for 30 mins. Rinse and drained and squeeze dry.
  2. Boil potatoes and carrots for 10 mins in boling water. Drain off the water.

       3.  Place the cooked potatoes into a serving bowl and use a fork to mash. Mash till there are still some
            little chunks behind.
       4.  Add in carrots, corns and japanese cucumber. Mix well with japanese mayaonise. Season with salt
            and pepper.
       5.  Chill in fridge before serving.

Some small notes to share: 
I have try to make it on my 2nd attempt whereby I did not have any carrot, hence I replace it with 1 hard boiled egg. You can even try out with some chopped ham too. You can also feel free to explore your own salad too! ^~
